Things You Need

  • 3 spoon fulls of capers
  • 3 bay leafs
  • 1/3 cup of vanilla yogurt
  • 1/4 cup milk
  • 1/2 can of coconut milk
  • 1/8 can of any red pasta sauce with pretty large tomato chunks
  • 4 fillets of Tilapia
  • Salt and Pepper
  • Pinch of Flour
Add the yogurt, coconut milk, bay leafs, salt, and pepper to a medium frying pan.  Over medium heat warm the mixture while stirring.  Add the capers and pasta red sauce, stir a bit more then add the Tilapia.  Bring to a simmer cooking until the fish is done.  While the fish is cooking add your cold milk to a pinch or so of flour and stir, put this aside.  Remove the fish from the sauce and place on serving plates.  Add the previously prepared flour milk mixture to the sauce and stir rapidly, add more or less for the desired sauce thickness.  Spoon sauce over the fish and serve.

I am happy to speak very frankly about sailing, living aboard, living in the Caribbean, leaving the US system, or any other topic you want to discuss. I have watched many people come and go from boating in the time I have been living aboard, both those living on smaller boats and those living on 110 foot mega yachts. It seems that many people come expecting tropical paradise and are shocked to find paradise is not always what you see in the pictures but includes some mosquitoes, huge bugs, poverty, stray dogs, crime, drugs, and many other problems left out of the tourist photos.
